Y’all…this is one of my favorite recipes and with the super bowl coming up in a few weeks I had to share because it would make a GREAT, (healthy-ish) game day appetizer.
Ingreditents:
Sweet Potatoes (sliced – I used a blade on my spiralizer)
Olive Oil
Fresh Squeezed Lime Juice
Chili Powder
Sea Salt
Black Beans
Fresh Pico de Gallo
Green Onions
Cilantro
Kale
Red Onion
Cabot Pepper Jack Cheese (naturally dairy free)
Avocado
Ground turkey
Directions:
- Toss sliced sweet potatoes with olive oil, fresh squeezed lime juice, chili powder, and sea salt. Put in the oven on a baking sheet for about 30 minutes on 375 (flip halfway), then broil on high for another 10 minutes.
- Arrange sweet potatoes in greased cast iron skillet – load with ingredients. *If you read my last post, I used my Threshold Cast Iron Skillet from Target*
- Put in the oven for another 15 minutes. Once done, top with avocados and dust w chili powder.
