Last night I launched the new release of Soul Body Barre..lots of pushups (70 to be exact – chest, tricep, and heart over heart push-ups).
It’s ok though because afterward, we had we these Mediterranean Quinoa Bowls with Roasted Red Pepper Sauce.
Toppings: Sabra hummus, baby spinach, red onions, tomatoes, julienne cucumbers, baby bella mushrooms (sauteed w EVOO), kalamata olives, feta cheese, grilled chicken and roasted red pepper sauce (see link for how to make your own)
It was delicious, and I highly recommend. I can’t wait to use the leftovers to make a wrap this week using Trader Joes Gluten Free/Wheat Free Brown Rice Tortillas!
What’s Quinoa? First off, it’s pronounced KEEN-WAH and it has a ton of nutritional value. More than any other grain or seed (oh, and it’s a seed not a grain). Also gluten free!
