Overnight Oats

Attention oatmeal lovers – time to mix it up.

Overnight oats are a quick, easy, and healthy alternative to your classic oatmeal.  Below is a recipe for a blueberry inspired grab and go breakfast  I made this week, but the best part about this simple recipe is you can easily make substitutions based on what you have in the fridge.  Some other mix-ins you could substitute are chocolate chips, banana, almond butter, peanut butter chips, strawberries, and raspberries.

Ingredients:

3/4 cup gluten free whole grain oats

1 cup almond milk

2 teaspoons chia seeds

2 teaspoons shredded coconut

2 teaspoons white chocolate chips

1/3 cup fresh (or frozen) blueberries

 

Directions:

  1. Place all ingredients in a glass jar, refrigerate overnight and enjoy!

Yea, it’s that easy.
