Watermelon Poke Bowls


A couple months ago I jumped on the poke trend. If you haven’t already, check out my post about these delicious, deconstructed sushi bowls – What’s Trending? POH-keh Bowls.

I try to incorporate fatty fish like tuna or salmon into my diet twice a week as a natural source of lean protein and omega-3s. I typically get fish from the seafood department at Harris Teeter – but sushi grade grocery store tuna can be hit or miss. Recently I stumbled upon this idea from Love and Lemons – swap tuna for watermelon. Ah-mazing.

Currently obsessed with this recipe. Not only does it solve the problem of having to find fresh sushi grade fish, but it incorporates seasonal ingredients and requires no cooking and minimal prep time, making it a great weeknight {summer} meal. You could throw this refreshing meal together easily in under 30 minutes.
