Chunky Guacamole
I’m a big fan of guac – especially when it’s fresh, chunky and homemade. It’s also SUPER easy to make.
Ingredients:
3 Avocados
1/2 Roma Tomato
1/4 Small Red Onion
1/2 Jalapeno
1/2 Freshly Squeezed Lime
Cilantro
Directions:
- Cut the avocados in half and then into cubes.
- Add diced tomatoes, red onion, jalapeño and cilantro.
- Add lime juice and season with salt and pepper to taste
- Mash with a fork.
Pico de Gallo
Ingredients:
3 Roma Tomatoes
1/4 Small Red Onion
1/4 Jalapeno
1/4 Freshly Squeezed Lime
1 Tablespoon Extra Virgin Olive Oil
Cilantro
Directions:
- Dice roma tomates, red onion and jalapeño.
- Add lime juice and EVOO.
- Season with garlic powder, salt and pepper to taste.
Loaded Sweet Potato Nachos
Ingredients:
Sweet Potatoes (sliced – I used a blade on my spiralizer)
Olive Oil
Fresh Squeezed Lime Juice
Chili Powder
Sea Salt
Black Beans
Fresh Pico de Gallo
Green Onions
Cilantro
Kale
Red Onion
Cabot Pepper Jack Cheese (naturally dairy free)
Avocado
Directions:
- Toss sliced sweet potatoes with olive oil, fresh squeezed lime juice, chili powder, and sea salt. Put in the oven on a baking sheet for about 30 minutes on 375 (flip halfway), then broil on high for another 10 minutes.
- Load with ingredients.
- Put in the oven for another 15 minutes. Once done, top with avocados and dust w chili powder.
Buffalo Cauliflower
Ingredients:
1 Head of Cauliflower
1/2 cup of Franks Red Hot Buffalo Sauce
1 Tablespoon I Can’t Believe It’s Not Butter
Directions:
- Cut cauliflower into bite-size florets.
- Toss cauliflower with buffalo sauce and melted butter substitute.
- Put in the over on a baking sheet lined with foil at 375 degrees for 30 minutes.
