Delicata Squash Tacos with Black Beans

Things I love: cooking with seasonal ingredients, trying new foods and experimenting with recipes. So when one of my coworkers told me about Delicata Squash, I immediately  headed to Pinterest and started pinning.

Oh, another thing I love – tacos, so when I came across this Delicata Squash Taco recipe from Naturally Ella, I had to try it and it didn’t disappoint.

Delicata Squash is a hard, winter squash. It’s quickly become one of favorite varieties not only because of it’s taste, but it’s also super easy to cook. Unlike some other types of squash you can eat the whole thing, yes including the skin – hello, quick and easy weeknight meals.

I didn’t have a lot of the seasonings the recipe called for like Coriander and Adobo seasoning, but I was able to find them in the International aisle of the grocery store and they were actually really inexpensive.

As far as variations to the recipe, the only thing I changed was adding some greens. I went with arugula. I also found the Adobo seasoning to be really salty, so next time I’m going to go light on the seasoning.

I had never charred tortillas before, but will be doing it every time I make tacos from now on – game changer. And also super simple (as long as you have a gas stove) – just place the tortilla over the direct flame and keep an eye on it to ensure it doesn’t catch fire. The char taste adds the perfect touch.
