Pumpkin Energy Bites

These paleo approved, gluten free bites are my go to post workout snack (or substitute for a sweet treat). They pack natural sugars from dates, healthy fats from almonds and are also high in fiber. I’ve made a couple, different variations including Key Lime (add lime zest + white chocolate chips), coconut and pumpkin (recipe below).

Ingredients:

1 cup almonds

1 cup pitted dates

1/4 cup organic pumpkin puree

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

Pinch of salt

1 tablespoon chia seeds (optional)

 

Directions:

Add almonds, dates and chia seeds to food processor. Pulse until consistency is “dough” like. Add pumpkin puree, vanilla extract, pumpkin pie spice and salt. Pulse.

Roll into bite size balls.

Refrigerate and enjoy!
