E I G H T Y // T W E N T Y is the non-diet, diet that’s exactly what you need this year. It’s actually not a diet at all, but rather a lifestyle, and the philosophy behind it is very simple. Eat clean eighty percent of the time and indulge the other twenty. With that being said, you can still make healthier choices when it comes to things like dessert. Below are two tastebud approved, guilt-less desserts that I’ve made recently. Both are gluten-free AND vegan.
Dark Chocolate Covered Graham Crackers
Melt dark chocolate morsels (I prefer the double boiler approach). Dip graham crackers. Add sprinkles.
Cookie Dough Macaroon Bites
1 cup Shredded Coconut, Unsweetened *I actually got this in the bulk aisle (pay per lb) at Whole Foods
1/3 cup Dark Chocolate Morsels
1/2 cup Extra Virgin Coconut Oil
2 teaspoons Vanilla
3 teaspoons Wholesome Organic Maple Syrup *also available at Whole Foods
Pink Himalayan Sea Salt
Combine dry ingredients. Add wet ingredients and mix. Roll into 1/2 inch balls. Refrigerate for 30 minutes.
