Disclaimer : I’m not a vegan [ although I tried going vegan for “fun” for a month last year ], but I love incorporating plant based protein like tofu into my diet. And these fried tofu tacos did NOT disappoint. Bonus points for how incredibly quick + easy they are to make. Details below!
Fried Tofu. The two biggest things here are to make sure you get extra firm tofu and that you remove all excess moisture [ because no one wants soggy tofu tacos, ya know ]. The easiest way to do this is to wrap the tofu in a paper towels and evenly place a heavy object on top. It will take about 10-15 mins and you may need to swap out the paper towels a couple of times.
Once you’ve removed the excess moisture from the tofu, cut into squares, toss in cornstarch and then toss in taco seasoning. Heat skillet with EVOO, add the tofu and flip until all sides are golden brown. Yep, it’s that easy.
Cassava Flour Tortillas. These grain free tortillas by Siete Foods are the bomb. Plus they are grain free, paleo, non GMO, vegan, gluten free, dairy free and soy free. Just throw them in the oven for a couple of minutes to warm up and they are ready to-go!
Toppings. Avocado, cilantro and jalapeños are non-negotiable for me when it comes to tacos. From there I like to switch it up – purple cabbage, homemade pico de gallo [ diced Roma tomatoes, red onion, jalapeño, cilantro and lime juice ], roasted red onions, diced pineapple .. whatever you want!
And don’t forget hot sauce! My current fav is Siete Foods Whole30 approved Jalapeño Hot Sauce. Check out the ingredients : water, jalapeño peppers, avocado oil, apple cider vinegar, pumpkin seeds, garlic, sea salt, tomatillo, flax seed, quillaja extract, chia seed and turmeric.
