Last trip to Trader Joe’s I picked up a box of Falafel Mix – I mean let’s be honest isn’t part of the reason you go to Trader Joe’s to find the next cauliflower gnocchi? All kidding aside I made this “Greek-ish” salad for dinner Monday night and loved it so much, I had it again for lunch the next day.

OK, so it’s not exactly a traditional Greek salad, but it’s the bomb.com and my new go-to salad. Plus it’s super quick/easy to make and you can make swaps to keep it fresh. i.e. lose the lettuce and throw over quinoa for a higher carb option.
INGREDIENTS
FOR THE SALAD
chopped kale
cherry tomatoes, cut in half
mini cucumbers
kalamata olives, pitted and drained
small green bell pepper, sliced thinly
red onion, sliced thinly
feta cheese *omit for dairy free
FOR THE GREEK DRESSING
2 tbsp extra virgin olive oil
2 tbsp red wine vinegar
2 tbsp lemon juice
1/2 tsp dijon mustard
2 cloves garlic, minced
1 tsp dried oregano
salt + black pepper
TOP W TRADER JOES FALAFEL

* p r o t i p – I used my Nuwave Air Fryer for the Falafel [ as opposed to frying in oil or baking in the oven ] | 360 degrees for 10-12 minutes *
WHIP IT UP . . .
COMBINE salad dressing ingredients in a bowl, WHISK, DRIZZLE over kale and TOSS. ADD tomatoes, cucumbers, olives, green bell pepper and red onion. ADD 2-3 falafel. TOP with feta and drizzle extra dressing over the salad.
