Whether you’re an athlete, professional snacker, or just busy, on-the-go, energy balls are a nutritious snack that are perfect to throw in your bag for some quick fuel.
There are a million different recipes out there, but this one requires zero fancy equipment, minimal ingredients and is stupid easy to make. Plus you can swap and add different mix-ins to keep things interesting !
1 1/4 cups Gluten Free Rolled Oats I used Bob’s Red Mill
1/2 cup nut butter of choice I used peanut butter this time, but almond works too!
1/3 cup honey or maple syrup
1 teaspoon pure vanilla extract
2 tablespoons chia seeds
2 tablespoons whole ground flaxseed meal Also Bob’s Red Mill
1/2 cup chocolate chips I used Enjoy Life dairy free semi-sweet mini chips
- Mix all of the ingredients in a large bowl
- Place in the fridge for 20 minutes to set (will make the balls easier to roll)
- Remove the bowl from the fridge and portion into 1 inch balls
